Mentha spicata is its Latin name, and the oil is taken from the flowering tops of the plant by steam distillation. It is a high grade 60% carvone variety. Carvone is the naturally occurring chemical that gives spearmint its distinctive odour, and the other 40% is made up of other chemicals found naturally in the plant.
